Description:

Pork Soft Bone is a high-quality cut of pork that includes the softer bones, cartilage, and some surrounding meat. It is often used to add a rich, savory depth to various dishes. Due to its high collagen content, when slow-cooked or simmered, the bones release gelatin into the cooking liquid, creating a smooth, velvety texture and enhancing the flavor profile of soups, stews, and broths.

Pork Soft Bone Congee

Congee (rice porridge) is a popular comfort food in many Asian cultures, and pork soft bones can add a rich depth of flavor.

Ingredients:

  • 1 lb pork soft bones
  • 1 cup rice (washed)
  • 6 cups water or chicken broth
  • 1-inch piece ginger, sliced
  • 2 cloves garlic, smashed
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, cilantro, and sesame oil for garnish

Instructions:

  1. Cook the bones: In a large pot, add the pork soft bones, rice, water or broth, ginger, and garlic. Bring to a boil, then lower the heat to a simmer. Let it cook for 1-2 hours, stirring occasionally.
  2. Break down the bones: As the pork soft bones cook, the meat will fall off the bones and the cartilage will break down, creating a creamy, rich congee base.
  3. Season: Once the congee reaches your desired consistency, stir in soy sauce and adjust seasoning with salt and pepper.
  4. Serve: Ladle the congee into bowls and garnish with green onions, cilantro, and a drizzle of sesame oil.
