Recipe: Classic Chinese Braised Pork Belly Cubes (红烧肉)

Ingredients:

  • 500g pork belly cubes
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sugar (rock sugar preferred)
  • 3 slices ginger
  • 2 cloves garlic
  • 1 star anise
  • 1 cup water
  • 1 tbsp cooking wine (optional)

Instructions:

  1. Blanch pork
    Boil pork cubes for 2–3 minutes, rinse and drain (removes impurities).
  2. Sear
    Heat oil, add pork cubes and fry until lightly browned.
  3. Caramelize
    Add sugar and stir until melted and coats the pork.
  4. Braise
    Add soy sauces, ginger, garlic, star anise, cooking wine, and water.
    Bring to a boil, then simmer on low heat for 30–60 minutes until tender.
  5. Reduce sauce
    Increase heat slightly to thicken sauce until glossy.
  6. Serve
    Garnish with spring onions and serve hot with rice.
