Recipe: Classic Chinese Braised Pork Belly Cubes (红烧肉)
Ingredients:
- 500g pork belly cubes
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar (rock sugar preferred)
- 3 slices ginger
- 2 cloves garlic
- 1 star anise
- 1 cup water
- 1 tbsp cooking wine (optional)
Instructions:

Blanch pork
Boil pork cubes for 2–3 minutes, rinse and drain (removes impurities). -
Sear
Heat oil, add pork cubes and fry until lightly browned. -
Caramelize
Add sugar and stir until melted and coats the pork. -
Braise
Add soy sauces, ginger, garlic, star anise, cooking wine, and water.
Bring to a boil, then simmer on low heat for 30–60 minutes until tender. -
Reduce sauce
Increase heat slightly to thicken sauce until glossy. -
Serve
Garnish with spring onions and serve hot with rice.
