Shrimp Scampi Recipe
Ingredients:
- 1 lb (450g) large tiger prawns, peeled and deveined
- 8 oz (225g) spaghetti or your preferred pasta
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 cup (120ml) dry white wine (or chicken broth)
- 1 tablespoon lemon zest
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons unsalted butter
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan (optional, for serving)
Instructions:

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of pasta water. Set aside. -
Cook the Prawns:
While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the prawns and cook for 2-3 minutes on each side until they are pink and opaque. Remove the prawns from the skillet and set aside. -
Make the Scampi Sauce:
In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for 1-2 minutes until fragrant (but not browned).
Add the white wine (or chicken broth) to deglaze the pan, scraping up any browned bits from the bottom. Let the wine simmer for 2-3 minutes until slightly reduced. -
Finish the Sauce:
Lower the heat and stir in the lemon juice, zest, and red pepper flakes. Add the butter and let it melt into the sauce. Season with salt and pepper to taste. -
Combine:
Add the cooked pasta to the skillet with the scampi sauce, tossing to coat the pasta in the sauce. If needed, add a bit of the reserved pasta water to help the sauce coat the pasta. Add the cooked prawns back into the skillet and toss gently. -
Serve:
Garnish with freshly chopped parsley and, if desired, a sprinkle of grated Parmesan cheese. Serve immediately with extra lemon wedges on the side.
