Instructions:
- Rub the pork collar with a mixture of olive oil, salt, pepper, smoked paprika, garlic powder, brown sugar, and mustard powder. Let it marinate for at least an hour, or overnight if possible.
- Preheat your smoker to 225°F (107°C).
- Smoke the pork collar for 4-5 hours, or until the internal temperature reaches 195°F (90°C) for pulled pork, or 145°F (63°C) for a medium-rare roast.
