Ingredients:
- 1 lb large prawns (peeled and deveined)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1-inch piece of ginger (grated)
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste (for Thai) or curry powder (for Indian)
- 1 tbsp olive oil or ghee
- 1 tsp turmeric (if using Indian spices)
- 1 tsp cumin (if using Indian spices)
- 1 tbsp lime or lemon juice
- Fresh cilantro (for garnish)
- Salt and pepper, to taste
Instructions:
- Heat oil in a large skillet or saucepan over medium heat.
- Add the chopped onion and cook for 3-4 minutes, until softened.
- Add the garlic, ginger, and curry paste (or curry powder) and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk, along with the turmeric and cumin (if using Indian spices). Stir well and bring to a simmer.
- Add the prawns to the pan and cook for 3-4 minutes until they turn pink and are cooked through.
- Stir in lime or lemon juice, and adjust the seasoning with salt and pepper.
