Sous Vide Ribeye (Precision Cooking)

Sous vide cooking ensures a perfectly even cook throughout the entire steak. After sous vide cooking, finish with a quick sear in a hot skillet.

Ingredients:

  • Ribeye steak
  • Salt and black pepper
  • Fresh herbs (optional)
  • Butter (for finishing)

Instructions:

  1. Season the Steak: Season the ribeye generously with salt and black pepper. You can also add fresh herbs like thyme or rosemary if desired.

  2. Vacuum Seal: Place the seasoned steak into a vacuum-seal bag. If desired, add a sprig of fresh herbs or a pat of butter.

  3. Sous Vide Cook: Set your sous vide machine to your preferred temperature:

    • Rare: 120°F (48.8°C)
    • Medium-Rare: 130°F (54.4°C)
    • Medium: 140°F (60°C)
    • Medium-Well: 150°F (65.6°C)

    Cook the steak in the sous vide bath for 1.5 to 3 hours.

  4. Sear the Steak: After sous vide cooking, remove the steak from the bag and pat it dry with paper towels. Heat a skillet over high heat with a little oil and sear the steak for 1-2 minutes per side until a nice crust forms.

  5. Rest and Serve: Let the steak rest for a few minutes before slicing and serving.
